[O]ne of the greatest compliments to barbecue, in my opinion, is avocado. Not guacamole, but a plain, whole avocado.
Problem is, you don’t see it everywhere.
I normally find it at the rustic bbq meat counter in small town Texas. Places like Luling, Lockhart- you know, the old school places.
The new places are all about making barbecue updated. Fresh and new sides, meat preparations that go against the old ways of doing things. I’d like to see newer places bringing touches of that ‘old-school’ mentality. Such is the case with Hays Co. BBQ in San Marcos, TX.
This isn’t an old school barbecue joint, but they have some touches that make it feel like one of those joints by the little extras that are available. From the avocado to the cheese cubes; or the jalapenos, crackers and the amazing beans in the big pot. These are little tidbits of yumminess that I wish I’d see at a lot more places.
Those items are amazing complements to the salty meat. The avocado and cheese just cut it a bit and make a nice flavor profile in your mouth.
So take note barbecue owners.
